
Alcohol Free Watermelon and Basil Mojito
This is a refreshing alcohol free mocktail which is bursting full of fruity flavours – the watermelon and basil are fresh tasting alternatives to the traditional lime and mint mojito.

Ingredients
- 750g (1.6 lb) watermelon
- 10g (0.3 oz) fresh basil
- 2 tbsp sugar syrup
- A pinch of Maldon salt
- 1 lime, juiced (plus lime slices for garnish)
- Ice

To serve
- In a blender, add the watermelon and blitz until smooth – then pass this through a sieve to remove any pips. In two tall highball glasses start with a handful of basil leaves in each, 1 tbsp of sugar syrup and a pinch of Maldon salt, then muddle these together using a muddler (or similar) to break down the basil leaves and infuse the flavours.
- Then add lime juice, fill the glass with ice and finally top up with the strained watermelon juice. Mix together and then garnish with a small triangle of watermelon, a slice of lime and some basil leaves.
